House Ice Cream Crescents Recipe

This recipe uses Jamaica's premier ice cream recipe to blend a great |
|
Jamaican recipe. |
|
INGREDIENTS |
|
1 cup butter, softened |
|
½ cup granulated sugar |
|
½ cup confectioners sugar |
|
1 egg |
|
1 tbsp vanilla |
|
2½ cups flour |
|
1 tsp baking powder |
|
¼ tsp salt |
|
½ cup roasted peanuts |
|
|

PREPARATION |
|
Preheat oven to 350 degree F. |
|
In large bowl, cream butter, granulated sugar. |
|
Add egg and vanilla. |
|
4. Stir in 2½ cups flour, baking powder and salt. |
|
Add peanuts. |
|
Mix thoroughly to form a stiff dough, adding additional flour if
necessary. |
|
Dip hands in sugar and roll dough into small balls. |
|
Roll each ball into a rope and shape into crescents on un-greased cookie
sheets. |
|
Bake 12-15 minutes or until bottom edges just begin to brown. |
|
Remove cookies to rack; cool completely. |
