Baked Pimento Cheese Recipe |

INGREDIENTS |
|
1½ cups uncooked white rice |
|
1½ tsp. salt |
|
¼ tsp. black pepper |
|
¼ cup diced Jamaican green pepper |
|
3 cups water |
|
1¾ cups evaporated milk |
|
½ tsp. salt |
|
1 tsp. prepared mustard |
|
1 tsp. Jamaican steak sauce |
|
2 cups grated cheese |
|
2 whole canned Jamaican pimentos, chopped |

PREPARATION |
|
1. Put rice, salt, pepper, Jamaican green pepper
and water in a saucepan. Bring to a boil. |
|
2. Turn heat low; cover and leave 14 minutes.
Remove from heat but leave lid on. While rice and Jamaican green pepper
cook, put milk, ½ teaspoon salt, mustard, and Jamaican steak sauce in pan. |

3. Heat 2 minutes; do not boil. Stir in cheese;
cook stirring until cheese melts. After rice cooks, stir in Jamaican
pimento. Spread rice over well greased shallow pan or baking serving dish.
Pour cheese sauce over rice. |

4. Bake at 350 degrees for 30 minutes. If made
ahead of time, store in refrigerator covered; then pour about ¼ cup milk
down through the rice. |
