INGREDIENTS |
|
2 oz Dry red wine |
|
½ Jalapeno pepper, minced |
|
2 stalks minced scallions |
|
1 tsp cooking oil |
|
1 tbsp pimento (allspice) |
|
1 clove garlic, minced |
|
½ tsp coriander |
|
½ tsp soy sauce |
|
¼ tsp nutmeg |
|
4 4-oz boneless chicken breast |
|
½ tsp cinnamon |

PREPARATIONS |
|
1. In a small bowl, combine all ingredients except
chicken until mixture forms a paste. |
|
2. Rub chicken evenly with spice mixture; cover
and refrigerate at least 8 hours, preferably overnight. |
|
3. Preheat broiler. Broil chicken on rack 10-15
minutes, turning once, until cooked through. |
