Jamaican Mango Cake Recipe I |

INGREDIENTS |
|
1 cup sugar |
|
1 tsp. Jamaican cinnamon |
|
2 tsp. baking soda |
|
½ tsp. salt |
|
3 eggs, well beaten |
|
1 tsp. vanilla |
|
1 8 oz. can (or fresh) crushed Jamaican pineapple |
|
1½ cups chopped Jamaican mango |
|
½ cup Jamaican peanuts |
|
½ cup raisins |
|
2 cups flour |

PREPARATION |
|
1. Mix Jamaican cinnamon, baking soda & salt. |
|
2. Mix eggs, vanilla and crushed Jamaican
pineapple. |
|
3. Mix Jamaican mangos, Jamaican peanuts and
raisins. |
|
4. Combine all ingredients together. Pour into
prepared pan and let sit for 20 minutes. |
|
5. Bake at 350' for 40-45 minutes |
