A delicious mango cobbler recipe. |

INGREDIENTS |
|
½ cup sugar |
|
1 tbsp. cornstarch |
|
1 cup water |
|
3 cups sliced Jamaican mangos |
|
1 cup flour |
|
1 tsp. Jamaican lemon juice |
|
1 tbsp. granulated sugar mixed with 1 tsp.
Jamaican cinnamon |
|
1½ tsp. baking powder |
|
½ tsp. salt |
|
3 tbsp. shortening |
|
½ cup milk |
|
1½ tsp. margarine |

PREPARATION |
|
1. Mix sugar and cornstarch in saucepan ,
gradually stir in water and Jamaican mango fruit |
|
and Jamaican lemon juice. |
|
2. Heat, stirring well. Pour into 1½ qt. Baking
dish; dot with margarine and sprinkle sugar and |
|
Jamaican cinnamon mixture over the top. |
|
3. Stir together flour, sugar, baking powder and
salt. Cut in shortening and stir in milk. |
|
4. Drop by spoonfuls on to hot fruit. |
|
5. Bake 20 to 30 minutes. Serve warm or cold, with
ice-cream or whipped topping. |
