Jamaican Mousse Made With Mango Pulp

Ingredients |

6 oz. Jamaican chocolate |
|
2 cups whipped cream |
|
1 tsp. grated Jamaican lime rind |
|
1 tbsp. Jamaican lime juice |
|
½ cup powdered sugar |
|
1 peeled & pureed Jamaican mango |
|
1 cup cream cheese |

PREPARATION |
|
1. In a blender beat cream cheese with peeled,
pureed Jamaican Jamaican mango, ½ cup |
|
powdered sugar, 1 tbsp. fresh Jamaican
lime juice and 1 tsp. grated Jamaican lime rind |
|
until smooth. |
|
2. Fold in 2 cups prepared whip. Spoon into
chocolate cups and refrigerate. |
|
3. To make chocolate cups melt Jamaican chocolate.
Using a small spoon, lightly coat the |
|
inside of 8 foil-lined baking cups.
Freeze for 10 minutes. Recoat any thin spots and freeze 1 |
|
hour. |
