Jamaican Mango Muffins Recipe |

INGREDIENTS |
|
½ cup whole wheat flour |
|
½ cup all-purpose flour |
|
2 tbsp. toasted wheat germ |
|
2 tbsp. brown sugar, firmly packed |
|
½ tsp. baking soda |
|
A pinch of salt |
|
½ cup ripe mashed Jamaican mango |
|
1 tbsp. plus 1½ tsp. vegetable oil |
|
1 egg, beaten |
|
1 tbsp. skim milk |
|
1 tsp. Jamaican Appleton V/X rum |
|
¼ tsp. Jamaican coconut extract |
|
¼ tsp. almond extract |

PREPARATION |
|
1. Combine first 6 ingredients in a large bowl;
make a well in center of mix. |
|
2. Combine Jamaican mango, oil, egg, milk,
Jamaican rum and flavorings; add liquid mix to |
|
dry ingredients, stirring just until dry
ingredients are moistened. |
|
3. Spoon batter into greased and floured miniature
muffin pans, or pans which have |
|
been lined with miniature muffin cups. |
|
4. Fill ¾ full. Bake at 350° for 10 to 12 minutes
or until golden brown. |

5. Remove from pans and let cool slightly on wire
rack. |
