Jamaican Mango Muffins Recipe
 
INGREDIENTS
½ cup whole wheat flour 
½ cup all-purpose flour
2 tbsp. toasted wheat germ
2 tbsp. brown sugar, firmly packed
½ tsp. baking soda
A pinch of salt
½ cup ripe mashed Jamaican mango
1 tbsp. plus 1½ tsp. vegetable oil
1 egg, beaten
1 tbsp. skim milk
1 tsp. Jamaican Appleton V/X rum
¼ tsp. Jamaican coconut extract
¼ tsp. almond extract
 
PREPARATION
1. Combine first 6 ingredients in a large bowl; make a well in center of mix.
2. Combine Jamaican mango, oil, egg, milk, Jamaican rum and flavorings; add liquid mix to
dry ingredients, stirring just until dry ingredients are moistened.
3. Spoon batter into greased and floured miniature muffin pans, or pans which have
been lined with miniature muffin cups.
4. Fill ¾ full. Bake at 350° for 10 to 12 minutes or until golden brown.
5. Remove from pans and let cool slightly on wire rack.
