Jamaican Orange and Mango Soup Recipe |

INGREDIENTS |
|
1½ cups buttermilk |
|
1 ½ cups Jamaican orange juice |
|
1 large navel Jamaican orange |
|
2 tsp. Jamaican honey |
|
3 large ripe Jamaican mangos |
|
Jamaican lemon juice to taste |
|
mint leaves |
|
|
|
PREPARATION |
|
1. Remove rind from the Jamaican orange and set it
aside. |
|
2. Peel and remove all the pith from the Jamaican
orange, then cut the |
|
orange into ¼ inch slices and
refrigerate. |
|
3. In a blender, puree the Jamaican mango flesh
and the Jamaican orange rind |
|
until smooth. Strain through a fine sieve
into a 1½ quart container. |
|
4. Add the buttermilk, Jamaican orange juice and
Jamaican honey to taste. |
|
5. The Jamaican soup recipe should be the
consistency of whipping cream |
|
If it is too thick, add more buttermilk. |
|
6. When serving, add Jamaican lemon juice and more
Jamaican honey, if necessary. |
|
Pour into chilled dishes and float an
orange slice and mint leaves on top. |
