Jamaican
pork mixed with mangoes and pot roasted.

INGREDIENTS |

1 Jamaican mango sliced |
|
1 tsp. salt |
|
2-4 lb. Jamaican pork roast |
|
3 medium Jamaican onions, halved |
|
3 small Jamaican potatoes, quartered |
|
4 Jamaican carrots, cut in chunks |

PREPARATION |
|
1. Salt roast and cook in covered electric fry pan
with enough water to cover bottom for about 1½-2 hours. |
|
2. Add Jamaican vegetables around roast for last
30 minutes. For last 15 minutes, place Jamaican mango slices on top of
roast. |
|
3. Slice roast and serve with vegetables and mango
slices. |
