Jamaican Baked Chicken with Mango Sauce Recipe |

Ingredients |

1 tbsp. brown sugar |
|
1 tbsp. butter |
|
¾ cup chopped fresh Jamaican mango |
|
1½ cups Jamaican mango nectar |
|
6 tbsp. melted butter |
|
¼ cup water |
|
2 tsp. salt |
|
1 clove Jamaican garlic |
|
1 tsp. ground Jamaican pepper |
|
1 large quartered chicken |

PREPARATION

1. Remove giblets and sprinkle the quartered chicken with Jamaican pepper.

2. In a blender, puree the Jamaican garlic, salt and water. Pour over the
chicken and marinate, refrigerated for 2 hours.

3. To make Jamaican sauce, puree the nectar and Jamaican mangos. In a small
skillet, melt butter, add Jamaican mango puree and brown sugar and stir.
When the mixture boils, remove from heat and set aside. Preheat oven to
500'. Place quartered chicken in a large greased baking pan. Baste with the
melted butter and bake for 15 minutes.

4. Turn the chicken and continue to bake another 15 minutes basting
frequently. Lower temperature to 375', turn the chicken again and bake for
10 minutes.

5. Remove from oven, drain juices from the pan and stir into the Jamaican
mango sauce.

6. Baste the chicken with Jamaican mango sauce and bake for another 5-7
minutes or until they are golden brown. Serve with extra slices of Jamaican
mango as garnish.
