INGREDIENTS |
|
1 cup ripe Jamaican bananas, mashed |
|
1 cup ripe Jamaican mango, finely diced |
|
1 cup whole wheat flour |
|
1 tbsp. Jamaican orange juice |
|
1 tsp. Jamaican cinnamon |
|
1 tsp. vanilla |
|
½ cup all purpose flour |
|
½ tsp. salt |
|
¼ cup butter or margarine |
|
2 eggs, beaten |
|
2 tbsp. wheat germ |
|
2 tsp. double acting baking powder |
|
¾ cup Jamaican brown sugar, loosely packed |

PREPARATIONS |
|
1. Preheat oven to 350'F. Butter loaf pan. Combine flour and other dry
ingredients. |

2. Cream together butter and sugar, adding vanilla and eggs. Mix well and
gradually fold in |
|
flour mixture. |
|
3. Drizzle Jamaican mango with Jamaican orange juice and add with Jamaican
bananas to |
|
bread mixture. |
|
4. After thoroughly combining, pour into pan and place in oven for approx. 1
hour. |
