Jamaican Barbeque Mango Sauce Recipe |

INGREDIENTS |
|
1 medium Jamaican onion, unpeeled |
|
2 ripe Jamaican mangos, peeled and diced |
|
½ cup Jamaican brown sugar |
|
½ cup cider vinegar |
|
½ tsp. salt |
|
2 Jamaican scotch bonnet peppers minced |
|
3 large Jamaican tomatoes |

PREPARATION |
|
1. Broil or grill Jamaican tomatoes and Jamaican
onion, charring all sides until soft, allow to cool, then peel Jamaican
onion and chop with Jamaican tomato. |

2. Place all ingredients in a saucepan and simmer
for 30 minutes. |
|
3. Remove from saucepan into a blender and puree.
Marinate meats or poultry in BBQ sauce. |
|
4. Place meat on grill and cook until done,
basting periodically with sauce. |
|
5. Serve hot as a side dish. |
