Jamaican Bean and Rice Recipe |

The recipe is delicious and can be substituted for
any other bean recipes. |

Ingredients |
|
1 cup broad beans dry |
|
½ cup coconut milk |
|
½ tsp dried thyme leaves |
|
¼ cup crushed garlic |
|
¼ cup escallion chopped |
|
½ tsp scotch bonnet pepper diced |
|
2¼ cup white rice |
|
¼ tsp salt |
|
|

Preparation |

1.
In a medium saucepan with a tight-fitting lid, place
the washed beans. |

2.
Add the coconut milk and bring to boil. |
|
3.
Reduce the heat and cook until the beans are tender. |
|
4.
Add the thyme, garlic, escallion and salt. |
|
5.
Add the hot pepper if desired. |
|
6.
Simmer for a few minutes and add the rice. |
|
7.
Cover the pot and bring to a boil again. |
|
8.
Reduce the heat to low.
Cook until parboiled. |
