Jamaican Bean and Rice Recipe

Jamaican Bean and Rice Recipe
The recipe is delicious and can be substituted for any other bean recipes.
 
Ingredients
1 cup broad beans dry 
½ cup coconut milk
½ tsp dried thyme leaves
¼ cup crushed garlic
¼ cup escallion chopped
½ tsp scotch bonnet pepper diced
2¼ cup white rice
¼ tsp salt
 
Preparation
1.      In a medium saucepan with a tight-fitting lid, place the washed beans.
2.      Add the coconut milk and bring to boil.
3.      Reduce the heat and cook until the beans are tender.
4.      Add the thyme, garlic, escallion and salt.
5.      Add the hot pepper if desired.
6.      Simmer for a few minutes and add the rice.
7.      Cover the pot and bring to a boil again.
8.      Reduce the heat to low. Cook until parboiled.
