Jamaican Beef and Onions with Mango Recipe |

INGREDIENTS |
|
1¾ tsp. cornstarch |
|
1 lb. Jamaican beef tenderloin, cut in strips |
|
1 Jamaican mango, cut in strips |
|
1 tsp. salt |
|
1 tsp. sugar |
|
½ cup chopped Jamaican scallions |
|
¼ cup Jamaican chicken stock |
|
3 tbsp. oil, plus 1¾ tsp. oil |
|
4 cups cooked rice |

PREPARATION |
|
1. Blend 1¾ tsp. oil, cornstarch, sugar and salt.
Add Jamaican beef and toss to coat thoroughly. Let stand for 20 minutes. |

2. Heat saucepan until hot. Add remaining oil and
heat until oil begins to smoke. Add Jamaican beef and stir fry until
Jamaican beef is just cooked through, about 2 minutes. |

3. Remove Jamaican beef with slotted spoon and
discard all but 1 tbsp. oil. |
|
4. Reheat wok and add scallions and beef. Stir fry
quickly, 30 seconds. Add chicken stock and stir fry 30 seconds more. |
|
5. Add Jamaican mango and toss mixture until the
Jamaican mango is warm. Serve immediately over cooked rice. |
