Jamaican Chicken and Mango Chutney Recipe |

A delicious mixture of Jamaican chicken and Jamaican mango to create the
perfect meat and mango chutney recipe. |

INGREDIENTS |
|
6 tbsp. sweet butter |
|
2 tbsp. Jamaican curry powder |
|
¼ cup Jamaican white wine |
|
2 chickens cut in quarters |
|
1½ cup Jamaican mango chutney recipe II |
|
2 tbsp. shredded Jamaican coconut |
|
1 minced Jamaican garlic |

PREPARATION |
|
1. Preheat oven to 350 degrees. Melt butter, add Jamaican curry powder and
cook for 2 to 3 minutes. Add wine and stir; remove from heat. |

2. Place chicken in pan and baste with butter mixture. Bake for 30 minutes.
Spread Jamaican mango chutney over chicken pieces and bake 30 minutes
longer, basting frequently. |

3. Remove chicken to serving platter. Keep warm. Reduce juice by boiling 3
to 4 minutes. Pour over chicken and sprinkle with Jamaican coconut and
minced Jamaican garlic. |
