Jamaican Coconut Milk Shrimp Recipe |

INGREDIENTS |
|
1 lb. shrimp, finely chopped |
|
Meat from 2 small Jamaican coconuts, grated |
|
1 Jamaican onion, chopped |
|
1 tsp. salt |
|
10 to 15 Jamaican lettuce leaves |
|
2 cups Jamaican coconut milk |
|
2 hot Jamaican peppers |

PREPARATION |
|
1. Combine shrimp, Jamaican coconut, Jamaican onion and salt. |
|
2. Spoon mixture into each Jamaican vegetable leaf and wrap mixture. Arrange
in pot and pour 1 cup Jamaican coconut milk over wrapped mixture. |
|
3. Cover and simmer for about 20 minutes. When almost done, add 1 more cup
of Jamaican coconut milk and hot Jamaican peppers. |
