Jamaican Coconut Shrimp in Mango Recipe |

INGREDIENTS |
|
1 lb. medium shrimp, cleaned |
|
½ cup flour |
|
½ cup dry white wine |
|
½ tsp. salt |
|
½ tsp. Jamaican pepper |
|
1 cup grated Jamaican coconut |

|
PREPARATION |
|
1. In medium bowl, combine flour, salt and Jamaican pepper. |
|
2. Mix in wine and add shrimp to batter. |
|
3. Heat 1 inch oil in large saucepan. Remove shrimp from batter and dredge
in Jamaican coconut. |

4. Fry until lightly browned. Drain on paper towels. |

JAMAICAN MANGO SAUCE: |
|
2 tbsp. Jamaican mango marmalade (peach may be sub.) |
|
2 tbsp. Jamaican orange juice. |
|
1. Combine Jamaican mango marmalade and orange juice and use to dip shrimp. |
