Jamaican Coconut Shrimp in Beer Recipe. |

INGREDIENTS: |

6 oz. Jamaican Red Stripe Beer |
|
5 eggs |
|
1c. milk |
|
2½ flour |
|
1 jar Jamaican orange marmalade |
|
16 lg. shrimp (without shells) |
|
8 oz. shredded Jamaican coconut |

|
PREPARATION: |
|
1. Mix all ingredients for eggs, milk, flour and Red stripe beer Jamaican
beer batter. |
|
2. Double dip the large shrimp in the beer batter then in the shredded
Jamaican coconut. |
|
3. Deep fry until golden brown. |
|
Serve the coconut shrimp recipe with the Jamaican orange marmalade |
