Jamaican Curried Chicken in Mango Salad Recipe |

INGREDIENTS |
|
1½ tsp. Jamaican curry powder |
|
1 tsp. Jamaican mango chutney recipe I |
|
½ tsp. cumin |
|
¼ cup low fat mayonnaise |
|
¼ cup plain nonfat yogurt |
|
2 Jamaican mangos, peeled and chopped |
|
2 tbsp. Jamaican cashews, chopped |
|
2 tbsp. Jamaican lime juice |
|
2 tsp. Jamaican scotch bonnet pepper, diced |
|
4 cups cooked chicken breast halves, diced |
|
4 Jamaican scallions, sliced thin |
|
lettuce |
|
salt and pepper |

PREPARATION |
|
1. In a large bowl, combine chicken, Jamaican lime
juice, Jamaican mangoes, Jamaican scotch bonnet pepper, and Jamaican
scallions. |
|
2. In a small bowl, whisk together the yogurt,
mayonnaise, Jamaican mango chutney, Jamaican curry powder, cumin, and salt
and pepper to taste. |
|
3. Add to chicken mixture; toss. Arrange a mound
of chicken on top of lettuce. |
|
4. Garnish each portion with 2 teaspoons of
Jamaican cashews if using. |
