Jamaican French Toast with Mangoes Recipe |

INGREDIENTS |
|
1½ cups soft bread crumbs |
|
1 cup cream |
|
1 cup sour cream |
|
1 tsp. vanilla extract |
|
¼ cup brown sugar |
|
¼ tsp. Jamaican cinnamon |
|
2 cups chopped Jamaican mango |
|
2 eggs separated |
|
4-6 tbsp. butter |
|
8 thick slices French bread |

PREPARATION |
|
1. Beat cream, egg yolks and vanilla until
blended. |
|
2. Beat egg whites and a dash of salt until
frothy. Spread bread crumbs in a jelly roll pan. |
|
3. Dip bread slices in yolk mixture about 10
seconds on each side, then dip in egg whites and coat with bread crumbs. |
|
4. Sauté in butter until golden. Combine Jamaican
mango, sour cream, sugar and Jamaican cinnamon. |
|
5. Serve over French toast. |
