A savory and delicious plantain recipe. |

INGREDIENTS |

4-5 ripe Jamaican plantains |
|
Cooking oil |
|
A pinch of salt |
|
3 Jamaican garlic cloves (chopped finely) |
|
Jamaican chicken broth |
| |

PREPARATION |
|
1. Heat Jamaican chicken broth in a small saucepan. |
|
2. Add Jamaican garlic. Let it sit until the Jamaican plantain is finished. |
|
3. Peel Jamaican plantain. Cut into ½ inch slices. |
|
4. Heat 2 inches of oil in a heavy duty frying pan. |
|
5. Fry Jamaican plantain a little at a time until it is slightly golden. |
|
6. Remove, drain on paper towels. |
|
7. Take a glass and flatten the Jamaican plantain. |
|
8. Return to frying pan and fry until golden. Remove and drain. |
|
Serve the Double Fried Jamaican plantain recipe using the garlic chicken
broth as a dip. |
