Jamaican Fruit and Coconut Shrimp Recipe
 
INGREDIENTS
1 ½ cup diced, cooked, shrimp
2 cup cooked shell Jamaican macaroni
1 cup drained Jamaican pineapple
½ cup sliced green grapes
3 tbsp. butter
3 tbsp. flour
1½ tsp. salt
½ tsp. ground Jamaican ginger
¼ tsp. Jamaican pepper
1½ cup Evaporated Jamaican milk
½ cup Jamaican coconut 
½ cup Jamaican papaya 
 
PREPARATION
1. Combine shrimp, macaroni, Jamaican pineapple and grapes. Melt butter in top of double boiler over hot water.
2. Combine flour, salt, Jamaican ginger and Jamaican pepper. Add to melted butter; stir until a smooth paste. Slowly add milk. Cool until thickened stirring constantly.
3. Add sauce to macaroni. Mix well. Pour into 1½ quart casserole. 
4. Top with Jamaican coconut and bake in a moderate oven (350 degrees) about 25 minutes. 
5. Serve chilled Jamaican papaya garnished with Jamaican lime wedges.
