Jamaican Fruit and Coconut Shrimp Recipe |

INGREDIENTS |
|
1 ½ cup diced, cooked, shrimp |
|
2 cup cooked shell Jamaican macaroni |
|
1 cup drained Jamaican pineapple |
|
½ cup sliced green grapes |
|
3 tbsp. butter |
|
3 tbsp. flour |
|
1½ tsp. salt |
|
½ tsp. ground Jamaican ginger |
|
¼ tsp. Jamaican pepper |
|
1½ cup Evaporated Jamaican milk |
|
½ cup Jamaican coconut |
|
½ cup Jamaican papaya |

PREPARATION |
|
1. Combine shrimp, macaroni, Jamaican pineapple and grapes. Melt butter in
top of double boiler over hot water. |
|
2. Combine flour, salt, Jamaican ginger and Jamaican pepper. Add to melted
butter; stir until a smooth paste. Slowly add milk. Cool until thickened
stirring constantly. |
|
3. Add sauce to macaroni. Mix well. Pour into 1½ quart casserole. |
|
4. Top with Jamaican coconut and bake in a moderate oven (350 degrees) about
25 minutes. |
|
5. Serve chilled Jamaican papaya garnished with Jamaican lime wedges. |
