Jamaican Jerk Chicken Wings

Jamaican Jerk Chicken Wings
A recipe straight from the Negril West End
 
INGREDIENTS
1 tsp ground allspice
1 tsp dried thyme
1½ tbsp scotch bonnet pepper diced
1½ tbsp black pepper
1½ tbsp cinnamon
¾ tbsp grated nutmeg
¾ tbsp diced escallions
2 tsp salt
2 tsp garlic powder
1 tsp sugar
¼ cup Soya sauce
¾ cup vinegar
½ cup orange juice
¼ cup olive oil
1 cup minced onion
2 lbs Chicken wings
 
PREPARATION
1.      In large glass or ceramic bowl combine allspice, thyme, scotch bonnet pepper, black pepper, escallion, nutmeg, cinnamon, salt, garlic powder and sugar.
2.      Slowly whisk in soy sauce, vinegar, orange juice.
3.      In slow stream whisk in olive oil.  Add onion and green onion.  Combine well.
4.      Add chicken and allow to marinate over night covered in refrigerator.
5.      If using outdoor grill place 2 bay leaves on coals. Grill chicken 6 min. each side.
