Kabob Sweet Potato Recipe

Jamaican Ham and Sweet Potato Kabobs Recipe |
|
Jamaican ham is grilled with Jamaican sweet potatoes and green pepper and
Jamaican pineapple juice sauce. |

INGREDIENTS: |
|
1 ½ to 2 pounds cooked Jamaican ham, cut in 1 ½-inch cubes |
|
2½ pounds fresh Jamaican sweet potatoes, cooked, peeled, and cut in 1½
-inch pieces |
|
1 medium Jamaican green pepper, cut in 1½ -inch squares |
|
1 teaspoon cornstarch |
|
1 small (6-ounce) can frozen Jamaican pineapple juice concentrate |
|
½ cup chili sauce |
|
3 tablespoons Jamaican honey |
|
2 tablespoons cooking oil |

PREPARATION: |
|
Thread cubed Jamaican ham, Jamaican sweet potatoes, and green pepper squares
alternately on 6 skewers. |
|
Brush kabobs with Jamaican pineapple Sauce (below). Grill over medium coals
for 15 to 20 minutes, brushing with sauce frequently. |

Jamaican Pineapple Sauce: In small saucepan, combine cornstarch and 2
tablespoons of the pineapple concentrate; stir until smooth. Stir in the
remaining pineapple concentrate, the chili sauce, honey, and oil. Cook,
stirring constantly, until sauce begins to to boil. Boil for about 1 minute. |

Serve with rice and remaining sauce. |
