An excellent Jamaican mango chutney recipe used for salad dressing. |

INGREDIENTS |
|
1 whole egg |
|
2 egg yolks |
|
1 tbsp. Jamaican mustard |
|
¼ cup red wine vinegar |
|
1 tbsp. Jamaican soy sauce |
|
½ cup Jamaican Mango Chutney Recipe III |
|
1 pinch salt & pepper |
|
¼ cup olive oil |
|
1¾ cup oil |

PREPARATION |
|
1. Combine first all ingredients except the oil and Jamaican olive oil in a
blender. |
|
2. Blend for 60 seconds. |
|
3. Dribble Jamaican olive oil in slowly with motor running. |
|
4. Continue adding oil slowly until proper consistency is desired. |
