Jamaican Pineapple and Coconut Cake Recipe |

INGREDIENTS |
|
1½ cup sugar |
|
2 eggs |
|
15 ounces crushed Jamaican pineapple |
|
2 cups flour |
|
½ teaspoon salt |
|
1½ teaspoon baking soda |

|
PREPARATION |
|
1. Mix well and pour into greased 9x13x2-inch inch pan, bake for 30 min at
350°. |
|
2. Make topping (below) while cake is baking. |
|
Topping |
|
1 stick butter (4 ounces) |
|
1 cup granulated sugar |
|
¾ cup evaporated milk |
|
1 teaspoon vanilla |
|
1 cup flaked Jamaican coconut |
|
PREPARATION |
|
1. Combine butter, sugar and milk in saucepan and boil very slowly for 10
minutes. |
|
2. Add remaining ingredients. |
|
3. Spread over hot Jamaican cake. Let cake and topping cool completely
before slicing |
