Jamaican Pork and Mango Recipe |

INGREDIENTS |
|
2 medium ripe Jamaican mangoes |
|
1 Jamaican pork tenderloin |
|
¼ cup Jamaican olive oil |
|
salt and pepper to taste |
|
Jamaican hot pepper sauce |

PREPARATION |
|
1. Peel one Jamaican mango and blend the flesh. |
|
2. Cut the other Jamaican mango into small cubes. |
|
3. Trim Jamaican pork tenderloin and slice into
1-inch thick medallions. Flatten slices lightly with hand. |
|
4. Spray a skillet or medium saucepan with a small
amount of Jamaican olive oil and heat on medium-high. |
|
5. Brown Jamaican pork for 1 minute on each side.
Season each side with salt and pepper to taste. Reduce heat and cook pork
another 5 minutes to cook through. Remove to a plate and add Jamaican mango
puree to the skillet or saucepan. |

6. Cook puree about, scraping up brown bits of
Jamaican pork, for about 30 seconds. Add several drops of Jamaican hot
pepper sauce and the Jamaican mango cubes. Toss cubes in puree while heating
through. Spoon sauce over Jamaican pork and serve with pasta or hot cooked
rice. |
