INGREDIENTS |
|
1 lb unshelled shrimp, uncooked |
|
1/3 cup Jamaican coconut milk, canned and sweetened |
|
2 Tbsp Jamaican lime juice |
|
1 Jamaican garlic clove, crushed |
|
1 minced Jamaican scotch bonnet peppers |
|
1 tsp ground Jamaican cinnamon |
|
¼ tsp ground Jamaican black pepper |
|
12 fresh Jamaican pineapple chunks |

PREPARATIONS: |

1. Peel and de-vein the Jamaican shrimp retaining tails; set aside. Combine
Jamaican coconut milk, Jamaican lime juice, Jamaican garlic, Jamaican
peppers and pour over shrimp. |

2. Marinate no more than 1 hour. Thread shrimp and pineapple chunks on
skewers. Broil or grill, 3 minutes per side, or until shrimp are done. |
