Jamaican Sweet Potatoes and Pimento Cheese

INGREDIENTS |

14 oz. can diced Jamaican pimento |
|
4 med. diced Jamaican potatoes |
|
1 med. diced Jamaican onion |
|
1 tsp. salt |
|
½ tsp. pepper |
|
½ lb. grated cheese |
|
2 cups milk |
|
2 tbsp. butter |
|
2 tbsp. flour |

PREPARATION |
|
1. Place Jamaican potatoes, Jamaican onions and
Jamaican pimento in greased baking dish. Melt butter in saucepan and blend
with flour and seasonings then add milk. |
|
2. Cook until thick. Remove from heat and add
cheese. Pour over Jamaican potatoes. |
|
3. Bake at 350 degrees until Jamaican potatoes are
tender |
