Jamaican Red Stripe Coconut Shrimp Recipe |

INGREDIENTS |

1 lb. unpeeled med. fresh shrimp |
|
¾ cup pancake mix |
|
¾ cup Jamaican Red Stripe beer |
|
1 tbsp. Jamaican coconut milk |
|
¼ cup all purpose flour |
|
1 cup Jamaican coconut flakes |
|
Light Jamaican vegetable oil |

PREPARATION |
|
1. Peel and de-vein shrimp; rinse well. |
|
2. Combine pancake mix, Jamaican Red Stripe beer and Jamaican coconut milk
and mix well. |
|
3. Dredge shrimp in flour, shake off excess. Dip into batter then dredge
coated shrimp in Jamaican coconut. |
|
4. Heat oil in saucepan (2" to 3" deep) to 350 degrees. |
|
5. Fry 5 to 6 shrimp at a time approximately 35 to 45 seconds on each side
and golden brown. Drain on paper towel and serve |
