Jamaican Rum and Plantain Recipe |

INGREDIENTS |
|
4 ripe Jamaican plantains |
|
6 tbsp. of butter |
|
2 tbsp. of flour |
|
4 tbsp. of sugar |
|
2 Jamaican oranges cut in thin slices |
|
½ cup of Jamaican Appleton rum |
|
¼ cup of Jamaican corn syrup |
|
1 tbsp. of Jamaican lemon juice |
|
grated half Jamaican lemon |

PREPARATION |

1. Peel the Jamaican plantains and cut them into 2-inch slices. |
|
2. In a large frying pan, melt the butter and brown the Jamaican plantains
slightly. In a bowl, mix the flour with the sugar and mix in the browned
Jamaican plantains. |

3. Grease a Pyrex bowl and spoon in the Jamaican plantain mix. Cover with
Jamaican orange slices and rind. In a bowl, mix the Jamaican rum, the lemon
juice, grated lemon and corn syrup. |

4. Pour this mixture over the Jamaican plantains, orange slices and rind. |
|
5. Bake at 350 for approximately 35 minutes, dipping the Jamaican plantains
in its own juice. |
