Jamaican Grilled Shrimp and Mango Salad Recipe |

INGREDIENTS |
|
2 large firm Jamaican mangoes, peeled & shredded |
|
3 tbsp. thinly sliced Jamaican escallions |
|
1 large Jamaican onion diced |
|
¼ cup Jamaican lime juice |
|
2 tbsp. Jamaican soy sauce |
|
1 teaspoon sugar |
|
1 small clove Jamaican garlic, minced |
|
1 small Jamaican scotch bonnet pepper, minced |
|
1 pound Jamaican shrimp |
|
Jamaican lime slices, for garnish |

PREPARATION |
|
1. Combine Jamaican escallions, Jamaican onions,
Jamaican lime juice, soy sauce, sugar, Jamaican garlic, and Jamaican scotch
bonnet pepper in a bowl. |

2. Mix in shredded Jamaican mango. |
|
3. Shell and de-vein shrimp and rinse well; divide
into 4 portions. Thread 1 portion onto a slender metal skewer. |
|
4. Run a second skewer through shrimp ½ to 1 inch
from the first skewer, to keep them flat. Repeat with remaining shrimp. |
|
5. Grill Jamaican shrimp on a medium hot grill,
covered, for about 3 minutes on each side, or until opaque but still a bit
moist in the center of thickest parts. |
|
6. Place shrimp over the Jamaican mango salad and
garnish with Jamaican lime slices. |
