INGREDIENTS |

24 large raw shrimp de-veined |
|
½ cup all purpose flour |
|
2 eggs |
|
3 cups shredded Jamaican coconut |
|

PREPARATION |
|
1. Dredge shrimp in flour, then eggs. Roll the shrimp in the shredded
Jamaican coconut, covering well. |

2. Deep fry shrimp at 375 degrees until they are golden. Serve with Jamaican
cocktail sauce to which you have added crushed Jamaican pineapple |
