Jamaican Sweet Potato Quick Bread Recipe |

INGREDIENTS: |
|
1 ½ cups all-purpose flour, sifted |
|
2 teaspoons baking powder |
|
¼ teaspoon salt |
|
1 teaspoon mace |
|
½ teaspoon Jamaican cinnamon |
|
1 cup granulated sugar |
|
2 large eggs, lightly beaten |
|
½ cup Jamaican apple sauce |
|
2 tablespoons milk |
|
1 cup cooked and mashed Jamaican sweet potatoes |
|
½ cup raisins |

PREPARATION: |
|
Grease bottom of a loaf pan approximately 9- x 5- x 3-inches. Stir together
flour, baking powder, salt and spices in mixing bowl. |
|
With a large spoon, stir in sugar, eggs, applesauce and milk; stir to
moisten all ingredients. |
|
Stir in mashed Jamaican sweet potatoes, pecans and dates or raisins. Pour
batter into prepared pan. |
|
Bake at 325° for about 1 hour and 10 minutes or until toothpick inserted in
center comes out clean. |
|
Cool in pan on a rack for 15 minutes. Remove from pan and continue cooling
on wire rack. |
