Jamaican Sweet Potato and Jamaican Banana Casserole Recipe |

This is a very popular Jamaican sweet potato casserole recipe. |

INGREDIENTS: |
|
6 medium Jamaican sweet potatoes |
|
2 eggs, separated |
|
3/4 cup mashed ripened Jamaican bananas |
|
¼ cup butter or margarine, softened |
|
½ teaspoon finely grated Jamaican lemon peel |
|
½ teaspoon salt |

PREPARATION: |
|
In a large saucepan cook Jamaican sweet potatoes covered, in enough boiling
salted water to cover for 30 to 40 minutes or until tender; then drain. |
|
Peel Jamaican sweet potatoes and mash. Beat in mashed ripened Jamaican
banana, butter or margarine, Jamaican lemon peel, and salt. |
|
Beat until fluffy; add egg yolks and beat well. Beat egg whites until stiff
peaks form; fold into Jamaican sweet potato mixture. |
|
Spoon Jamaican sweet potato mixture into a buttered 1½ -quart casserole. |
|
Cover and bake at 350° for 20 minutes; uncover and bake 20 to 25 minutes
longer. |
