Jamaican Sweet Potato and Mango Chutney Recipe |

INGREDIENTS |
|
4 Jamaican sweet potatoes, cooked, peeled and cut into cubes |
|
1 cup chopped Jamaican apples |
|
1 cup sliced celery |
|
¼ cup raisins |
|
Dressing |
|
½ cup mayonnaise |
|
4 tsp. Jamaican curry powder |
|
4 tsp. Jamaican lemon juice |
|
1/4 c. Jamaican Mango Chutney Recipe II |
|
2 slices bacon, cooked crisp, drained & crumbled |

|
PREPARATION |
|
1. Pour dressing over Jamaican potato mixture. Toss gently to mix
and coat. |
|
2. Cover and chill at least 1 hour for flavor to develop. |
|
3. Sprinkle with bacon just before serving |
