Jamaican Tomato Sauce And Okra Recipe |

INGREDIENTS |
|
½ pound Jamaican okra cut in chunks |
|
2 tbsp. olive oil |
|
¼ cup finely chopped Jamaican onion |
|
1 clove Jamaican garlic, finely minced |
|
2 medium Jamaican tomatoes peeled and diced |
|
1 tbsp. Jamaican lemon juice |
|
dash salt and pepper |

PREPARATION |
|
1. Heat 1 tablespoon olive oil in a saucepan over
medium-high heat. |
|
2. Sauté the Jamaican okra for 3 to 5 minutes,
then remove with slotted spoon to paper towels. |
|
3. Heat the remaining tablespoon of olive oil in
the saucepan. When hot, add the chopped Jamaican onion; sauté for 2 to 3
minutes. |
|
4. Add the Jamaican garlic and sauté another 2
minutes. Add the diced Jamaican tomatoes and stir together until the mixture
boils. Turn down to a simmer, add the Jamaican lemon juice, salt and pepper. |
|
5. Simmer for 30 minutes longer. |
