Jamaican Curry Recipe |

In Coolie Town, curry is used for just about
anything, including the curried ackees. |

Ingredients |
|
8 Ackee pods or ½ can of Ackees |
|
¼ tsp salt |
|
¼ tsp black pepper |
|
4 tomatoes chopped |
|
1 onion finely chopped |
|
3 stalks escallion finely chopped |
|
¾ cup coconut milk |
|
2 tbsp margarine |
|
¼ tsp Jamaican hot sauce |
|
1 tbsp curry powder |

Preparation |
|
1.
Boil
ackees in salted water unless using canned ackees. |
|
2.
Sauté
onions, tomatoes, escallion and curry powder in butter. |
|
3.
Add the
coconut milk and bring to a mild boil then add the ackees. |
|
4.
On a
low flame continue to cook until the ackees have absorbed the curry sauce. |
|
5.
Add
black pepper and salt and let cook for another 5 minutes. |
|
6.
Serve
hot. |
