Jamaican Fish Recipe
Ingredients
2½ lb fish fillet
½ tbsp salt and black pepper mixed
¾ cup water
¼ cup melted butter
¼ cup coconut milk
¼ cup onion diced
¼ cup escallion diced
½ cup sweet peppers
½ cup tomatoes diced
½ tbsp scotch bonnet pepper diced
½ cup chopped okras
1 onion sliced
1 scotch bonnet pepper diced into rings
½ bag water crackers
 
Preparation
1. Season outside fish with salt and black pepper
2. Allow to marinate and stuff cavity of fish with ½ seasonings. 
3. In a deep skillet heat melted butter, and add fish and all ingredients.
4. Cover and allow to cook for until fish is done.
5. Add crackers atop and allow to soak.
6. Remove and serve hot.
