Ingredients |

2½ lb fish fillet |
|
½ tbsp salt and black pepper mixed |
|
¾ cup water |
|
¼ cup melted butter |
|
¼ cup coconut milk |
|
¼ cup onion diced |
|
¼ cup escallion diced |
|
½ cup sweet peppers |
|
½ cup tomatoes diced |
|
½ tbsp scotch bonnet pepper diced |
|
½ cup chopped okras |
|
1 onion sliced |
|
1 scotch bonnet pepper diced into rings |
|
½ bag water crackers |

|
Preparation |
|
1. Season outside fish with salt and black pepper |
|
2. Allow to marinate and stuff cavity of fish with
½ seasonings. |
|
3. In a deep skillet heat melted butter, and add
fish and all ingredients. |
|
4. Cover and allow to cook for until fish is done. |
|
5. Add crackers atop and allow to soak. |
|
6. Remove and serve hot. |
