Jamaican Recipe For Jerk Sauce |

A great jerk recipe with a special jerk sauce. |

INGREDIENTS |
|
2 large white onions chopped |
|
½ cup diced scotch bonnet peppers |
|
½ cup fresh ginger, peeled |
|
¼ cup ground allspice (pimento) |
|
¼ cup fresh thyme leaves |
|
3 tsp black pepper |
|
¾ cup white vinegar |
|
1 cup soy sauce |
|
4 chicken quarters |
|

PREPARATION |
|
1. First prepare Doreen’s Special Jerk Sauce |
|
JERK SAUCE |
|
a.)
Pulverize the onions, peppers, and ginger in a blender or food processor. |
|
b.)
Transfer the mixture to a large bowl. |
|
c.)
Stir in
the allspice, thyme, black pepper, vinegar, and soy sauce. |
|
|
|
2.
Coat
the chicken with the sauce. |
|
3.
Cover
and marinate in the refrigerator for 24 hours. |
|
4.
Preheat
the oven to 350 degrees. |
|
5.
Place a
shallow pan of boiling water on the oven floor. |
|
6.
Put the
chicken on a rack and place in a roasting pan. |
|
7.
Roast,
basting frequently with the sauce. |
|
8.
Preheat
the grill and place the chicken on it basting the chicken with more jerk
sauce. |
|
9.
Sear
the chicken for 5 minutes then remove from the heat. |
|
10.
Serve
hot. |
