Jerk Chicken Marinade |

A great jerk marinade with ginger flavoring |

INGREDIENTS |
|
¼ cup Allspice (pimento) |
|
2 tbsp chopped ginger |
|
3 scotch bonnet pepper diced |
|
1 tsp ground cinnamon |
|
5 stalks escallions chopped |
|
1 tbsp ground black pepper |
|
½ cup chopped onions |
|
¼ cups vegetable oil |
|
3 tbsp garlic chopped |
|
¼ cup lime juice |
|
4 bay leaves crushed |
|
|
|
PREPARATION |

1.
Roast
the pimento berries in a dry skillet. |
|
2.
Remove
and crush them to a powder in a mortar or spice mill. |
|
3.
Place all the ingredients in
a blender or food processor and puree to make a sauce. |
|
4.
Remove and store in the
refrigerator. |
