Great Jamaican chicken wings to go with your pizza
recipes or as a great hors d’oeuvre. |

INGREDIENTS |
|
1 onion chopped |
|
½ cup scallions chopped |
|
2 garlic cloves |
|
½ tsp thyme crumbled |
|
1½ tsps salt |
|
1½ tsps ground allspice (pimento) |
|
¼ tsp nutmeg grated |
|
½ tsp cinnamon |
|
¼ cup scotch bonnet pepper minced |
|
1 tsp black pepper |
|
6 drops Tabasco sauce |
|
2 tablespoons soy sauce |
|
¼ cup vegetable oil |
|
15 chicken wings trimmed |
|
|
|
PREPARATION |
|
1.
Pre
pare the marinade by placing all the ingredients in a food processor or
blender and puree. |
|
2.
In a
large shallow dish arrange the wings in one layer and spoon the marinade
over them, rubbing it in (use rubber gloves). |
|
3.
Let
them marinate, covered & chilled, turning them once and leave them
overnight. |
|
4.
Arrange
the wings in one layer on an oiled rack set over a foil-lined roasting pan,
spoon the marinade over them & bake in the upper third of a preheated 450F
oven, 30-35 minutes or until they are cooked through. |
