Negril Coconut Cake Recipe |

INGREDIENTS: |

Cake |
|
1 box chocolate or chocolate fudge cake mix |
|
Filling |
|
14 ounces frozen Jamaican coconut |
|
1½ cups evaporated milk |
|
1 cup granulated sugar |
|
Icing |
|
4 squares unsweetened Jamaican chocolate |
|
¾ cup brown sugar |
|
½ cup water |
|
A dash Salt |
|
¼ cup butter |

PREPARATION: |
|
1. Bake cake as directed and split layers. Mix milk, sugar and melt. Stir
until sugar is dissolved. |
|
2. Remove from heat and stir in Jamaican coconut. Put this mixture between
each split layer and on top. |
|
3. Make Icing. Melt Jamaican chocolate with the brown sugar; add salt,
water, and butter. Simmer 3 minutes. Remove from heat. |
|
4. Add 1 teaspoon vanilla; mix well. Put Jamaican chocolate icing on top and
sides of cake. |
