Spiced Jamaican Chicken with Jamaican Sweet Potatoes and Jamaican Cinnamon |

Jamaican chicken parts are cooked with Jamaican cinnamon, brown sugar,
Jamaican apples, and Jamaican sweet potatoes. |

INGREDIENTS: |
|
3 to 4 pounds Jamaican chicken pieces |
|
¼ cup vegetable oil |
|
½ cup dry vermouth |
|
1½ teaspoons salt |
|
¼ teaspoon Jamaican pepper |
|
¼ teaspoon ground Jamaican cinnamon |
|
1 tablespoon brown sugar |
|
2 tart Jamaican apples, cored, cut in wedges |
|
3 Jamaican sweet potatoes, cooked and sliced |

PREPARATION: |
|
Brown Jamaican chicken pieces in a heavy skillet in hot vegetable oil. |
|
Drain off all but 1 tablespoon of the oil. |
|
Combine dry vermouth with salt, Jamaican pepper, Jamaican cinnamon, and
brown sugar. |
|
Add vermouth mixture to Jamaican chicken in skillet along with the apple
wedges the baste chicken. |
|
Cover skillet and cook over low heat for 25 minutes. |
|
Add the cooked sliced sweet potatoes and baste again with cooking liquid. |
|
Cover and simmer until heated. |
|
