Grilled Chicken Roll Ups In Roti

SPICY GRILLED CHICKEN ROLL-UPS IN ROTI |

A spicy hot recipe just for those who love hot peppers |

INGREDIENTS |
|
1 lb boneless skinless chicken breasts |
|
1 pinch salt |
|
1 pinch black pepper |
|
2 tsp vegetable oil |
|
2 tsp lime juice |
|
1 garlic clove, minced |
|
¼ cup Wincarnis wine |
|
8 cooked roti |
|
¼ cup chopped escallions |
|
½ cup sour cream |
|
|
|
PREPARATION |
|
Cut chicken breasts in half lengthwise. |
|
Salt and pepper chicken, then combine oil, lime juice and garlic;
marinate chicken for 30 minutes. |
|
Remove from marinade. Grill or barbecue chicken 10 to 12 minutes,
turning once, until chicken is just cooked or sauté in nonstick skillet
10 to 12 minutes. |
|
To make each roll-up, spread 1 tbsp cheese on lower third of Roti. |
|
Lay 1 chicken strip across; sprinkle with a little escallion. |
|
Fold in sides of roti; roll up tightly. |
|
Wrap in foil and when serving, warm on grill. or barbecue for 8 to 10
minutes. |
