Spicy Grilled Chicken Roll Ups In Roti

A spicy hot recipe just for those who love hot peppers
1 lb boneless skinless chicken breasts
1 pinch salt
1 pinch black pepper
2 tsp vegetable oil
2 tsp lime juice
1 garlic clove, minced
¼ cup Wincarnis wine
8 cooked roti
¼ cup chopped escallions
½ cup sour cream
Cut chicken breasts in half lengthwise.
Salt and pepper chicken, then combine oil, lime juice and garlic; marinate chicken for 30 minutes.
Remove from marinade. Grill or barbecue chicken 10 to 12 minutes, turning once, until chicken is just cooked or sauté in nonstick skillet 10 to 12 minutes.
To make each roll-up, spread 1 tbsp cheese on lower third of Roti.
Lay 1 chicken strip across; sprinkle with a little escallion.
Fold in sides of roti; roll up tightly.
Wrap in foil and when serving, warm on grill. or barbecue for 8 to 10 minutes.
