Jamaican Appetizer Recipe |

A special goat meat appetizer popular across
Jamaica. |

Ingredients |
|
1 lb Jamaican yam |
|
¼ tsp salt |
|
¼ tsp black pepper |
|
¼ tbsp dried thyme leaves |
|
½ tbsp scotch bonnet pepper diced |
|
2 lg green bananas boiled and chopped |
|
½ cup chopped carrots |
|
¼ cup chopped escallion |
|
4½ cups water |
|
2 lb goat head meats |
|
2 chochos, peeled and finely chopped |

Preparation |

1.
Chop
goat head meat finely and place in water. |
|
2.
When it
reaches a boil add all other ingredients to the pot. |
|
3.
Reduce
heat, cover, and simmer 45 to 55 minutes, or until yam, chocho and bananas
are soft. |
|
4.
Serve
hot. |
