A great tasting recipe even though not a popular
meat in Jamaica, lamb is popular in North Coast Hotels. |

INGREDIENTS |
|
4 lb de-boned shoulder of lamb rolled and tied |
|
¼ tsp salt |
|
¼ tsp paprika |
|
¼ cup vegetable oil |
|
1 tbsp Worcestershire sauce |
|
½ tsp allspice |
|
¼ cup onion, minced |
|
2 tbsp sugar |
|
¼ cup soy sauce |
|
¼ cup escallion chopped |
|
|

PREPARATION |
|
1.
Place
in a blender and blend all ingredients together except oil and lamb. |

2.
Use ¾
to marinate in lamb meat and then discard. |
|
3.
Place
lamb on rack in roasting pan and roast at 325 Degree F for 90 minutes
basting with remaining marinate every 15 minutes. |
|
4.
Remove
cut in serving portions and serve hot. |
