JAMAICAN CRAB AND PEAR COCKTAIL |

The Jamaican avocado pear is a popular choice and even more so in this
crab recipe |

INGREDIENTS |
|
1 cup cooked crab meat |
|
2 avocado pears peeled & chopped |
|
½ tsp scotch bonnet pepper minced |
|
¼ cup tomato chopped |
|
¼ cup lime juice |
|
2 tbsps vegetable Oil |
|
2 tbsps onion chopped |
|
2 tbsps chopped escallion |
|
1 clove garlic chopped |
|
¾ tsp salt |
|
1 pinch black pepper |
|
1½ cups lettuce finely chopped |
|
3 lemon wedges |
|
|
|
PREPARATION |
|
Mix all ingredients except lettuce and lime wedges. |
|
Place ¼ cup of lettuce on edge of 6 serving dishes. |
|
Divide the crabmeat mixture among the dishes. |
|
Garnish with lime wedges. |
