Jamaican Crab And Pear Cocktail

JAMAICAN CRAB AND PEAR COCKTAIL     
The Jamaican avocado pear is a popular choice and even more so in this crab recipe
INGREDIENTS
1 cup cooked crab meat
2 avocado pears peeled & chopped
½ tsp scotch bonnet pepper minced
¼ cup tomato chopped
¼ cup lime juice
2 tbsps vegetable Oil
2 tbsps onion chopped
2 tbsps chopped escallion
1 clove garlic chopped
¾ tsp salt
1 pinch black pepper
1½ cups lettuce finely chopped
3 lemon wedges
PREPARATION
Mix all ingredients except lettuce and lime wedges.
Place ¼ cup of lettuce on edge of 6 serving dishes.
Divide the crabmeat mixture among the dishes.
Garnish with lime wedges.
