Favorite Carrot Bake Recipe

JAMAICAN FAVORITE CARROT BAKE |

A popular choice among the Jamaican vegetarians absolutely delicious. |

|
INGREDIENTS |
|
1 lb. carrots, peeled and coarsely chopped |
|
1 medium potato, peeled and coarsely chopped |
|
2 tbsp unsalted butter |
|
1 tsp salt |
|
¼ tsp pepper |
|
3 cups chicken stock |
|
¼ cup yoghurt |
|
|
|
PREPARATION |
|
In a saucepan place carrots and potato in water to cover, and simmer
until |
|
vegetables are cooked. |
|
Puree vegetables in a blender or food processor with butter, salt and
pepper. |
|
Return to saucepan and stir in chicken stock. Place over medium heat; |
|
heat through. |
|
Serve immediately, garnished with a dollop of yoghurt and sprig of
fresh |
|
oregano or dill. |
