Cornmeal Pudding Recipe

OCHO RIOS CORNMEAL PUDDING |

INGREDIENTS |
|
2 cups coconut milk |
|
4 cups water |
|
½ cup margarine |
|
½ cup raisins |
|
2 cups granulated sugar |
|
3 cups cornmeal |
|
½ cup flour |
|
1 tbsp cinnamon |
|
1 tsp nutmeg |
|
1 ½ tsp salt |
|
2 tsp vanilla |
|
2½ cups anchor milk |
|
¼ cup coconut milk |
|
½ cup granulated sugar |
|
½ tsp. cinnamon |
|
|
|
PREPARATION |
|
Put coconut milk, water, margarine, raisins and sugar to boil. |
|
Combine the next six ingredients and add 2 cups milk to soften. |
|
Add to the boiling liquid and stir briskly. |
|
Lower flame and continue stirring for 10 minutes. |
|
Turn out into a greased baking tin and pour on mixture of coconut milk, |
|
sugar and cinnamon. |
|
Put to bake at 180ºC/350ºF for about 55-60 minutes. |
|
Remove from oven, cool and serve. |
