Ocho Rios Cornmeal Pudding Recipe

OCHO RIOS CORNMEAL PUDDING     
Another great tasting recipe from the resort town
INGREDIENTS
2 cups coconut milk
4 cups water
½ cup margarine
½ cup raisins
2 cups granulated sugar
3 cups cornmeal
½ cup flour
1 tbsp cinnamon
1 tsp nutmeg
1 ½ tsp salt
2 tsp vanilla
2½ cups anchor milk
¼ cup coconut milk
½ cup granulated sugar
½ tsp. cinnamon
PREPARATION
Put coconut milk, water, margarine, raisins and sugar to boil.
Combine the next six ingredients and add 2 cups milk to soften.
Add to the boiling liquid and stir briskly.
Lower flame and continue stirring for 10 minutes.
Turn out into a greased baking tin and pour on mixture of coconut milk, 
sugar and cinnamon.
Put to bake at 180ºC/350ºF for about 55-60 minutes.
Remove from oven, cool and serve.
